Weird Hesitation under WOT

So I babied the car for the past 3-4 days to see what kind of mpg I can average in the city and still got 16.7 so far average. I feel like this is bad and something might be wrong but the car drives very nicely under normal driving. Well this morning on the way to work I decided to feel some power and got on it from a stop with traction control off. The car accelerated quickly but I noticed in 2nd and 3rd gear there was some hesitation in the upper rpms. Does anyone have any idea what it could be? It only happens for a second, feels kind of like the car "skips" a beat and then it goes back to accelerating hard. I tried it 3-4 times just to see if it will keep happening but it always happens in 2nd and 3rd gear at least once or twice going through the gear. Kind of feels like something is holding it back. It's just hard to explain. I am running 93 octane gas and the sparkplugs are brand new gapped at .035 which is recommended. Before the sparkplugs I had similar hesitation but less and I was hoping the sparkplugs would be the fix but it seems like this morning its worse. Does anyone have any idea? No CEL lights and the car drives perfect under normal driving. I am begging to worry here and the low mpg's even while babying the car is worrying me. I called my ford dealer and scheduled an appointment for Friday but I am worried the mechanic will not see anything wrong and I will be at work so I can't drive with him. (Just dropping off the car in the morning)

The plugs come .30 from factory now. I'd regap them.

Even the 10-12 models? You think it could be because of the plugs? The old ones in the car were also around the .035 when I took them out and they looked good (healthy). If ford had them at .035 at some point I would assume that they still shouldn't be making the car hesitate or skip?

It will suck having to go back and re-gap but if dealer cant figure out I will have to. Anyone else have ideas? The COP's looked fine also, not sure if one of them could be going bad, but then there would be a CEL right?

They come pregapped at at that now but that was not always so, his model year may be diffrent.

What model and make of vehicle?

My SHO gets 22 with alot of traffic driving but mostly freeway, stop and go in the mornings.

16mpg sounds atrocious and may allude to something significant being off, boost leak or something to that affect. Does it make any audible noises while driving? No check engine light or anything I assume?

Its a 2011 with 53k miles. No boost leaks from what I can hear. I also checked all the hoses when doing plugs and all looked good. No check engine light.

Maybe low on transmission fluid and that would cause you to run a tad higher rpm for the same dynamic fluid affect to move your vehicle outside of overdrive lockup on the torque converter. And under heavy acceleration would not be able to acuate the gear change as rapidly as demanded by the vehicle confusing it. You check transmission fluid level with the vehicle running on level ground FYI.

Not sure what rpm but it was a lot lower than my previous vehicle, somewhere around 2k at 70? I will have to check. I will also check the transmission fluid today after work. I just have no faith in the service people at the dealership but will give them a chance.

Have you checked the knock sensor wiring? To confirm that it's not chaffed or rubbing against the intake manifold.

yup that's the first think I checked when doing plugs. They are wrapped up and look good.

Ahh good question I forgot to update on that. I actually put it back to stock as it got kinda annoying. I was hoping for turbo spool noise not the blow off. The vehicle had a bit of hesitation before that which i was hoping would be fixed with plugs but didnt notice until today its still there but even a bit worse this morning.

Can you log ?  Check your fuel trims to see if it's running rich. (-% values)

I could log but i have no idea what id be looking at/for lol. I will let the dealer mess with it on Friday. Hopefully they dont crash my car trying to do a WOT pull..

If you have an OBDII Bluetooth adapter and an Android device running Torque Pro, logging is very straightforward.  I do find that the data is more consistently captured in the file if you have the gauges on an active "desktop" within Torque.  You would be looking at Short Term Fuel Trim (banks 1 & 2), and Long Term Fuel Trim (banks 1 & 2).  Also can capture timing advance, knock retard (custom PID for that), etc.  I am sure one of the gurus on here can guide you on exactly what to log.

Once logging is complete, you can send the log to yourself in a CSV (Excel) format and look at the data.  If you don't have too many parameters you are trying to log, you can set Torque to log every 1/10 of a second.  I use the OBDLink device for faster speed, but normal ELM327 OBD adapters should be ok too.

If tuned:  Take note of the strategy code as you return to stock (including 3 bar MAP to 2 bar MAP) -> take car in & get it serviced -> check strategy code when you get car back -> have tuner update your tune if the strategy code has changed -> reload tune -> ENJOY!

Follow what SHOdded and BigMac advice was and sometimes its basic maintenance you have to do on these cars such as grab a can of MAF cleaner and remove both of the MAP sensors and clean them,overtime they get dirty,filled oil,dirt and deposits,also clean the IAT sensor also,its called preventative maintenance,i always carry a can or two and good luck.
