At what condition does a 2.0 EB typically go into fuel enrichment? I know there are a lot of factors involved so just a close estimate is fine.

Wild guess, 60-80% pedal application

Do you have any logs?

If so, look at lambse and when it moves downward from one, it is enriching. The 3.5's run uber rich on the oem calibration so you might see it in the .7's
