I had a bunch of TSBs done to my car recently, as my warranty is almost done. I had the dealer do a few to the head unit as the ambient lighting and audio would act weird at times. Interesting enough when they applied the TSBs Siri Eyes Free is now enabled on my SHO. Up until now I had to hold the home button on my Iphone and the display would be unknown caller. Now it says Siri and I can access Siri by holding down the voice button on the steering wheel. My sync software was up to date before they applied the TSBs. So whatever they did it is now enabled and working. Just thought I would throw it out there in case anyone was wanted this enabled on theirs. I have listed the TSBs that I pointed out to my service tech, I am not sure if they were all applied but getting this to work is welcome.

Siri Eyes Free is enabled on any Sync2 version 3.8 or newer by default.
Interesting, my wife's 2016 Fusion Titanium does not have it enabled... hers also has no updates available. I'll have to check the version of the MFT in the fusion.

I had my iPhone connected for a while but it does not say Siri up top. But if you hold the button on the steering wheel for 3 seconds it goes to Siri not sync

That is correct. That's the only time eyes free is active..In the 3 second press scenario.
I usually just scream "HEY SIRI!!!!"
That works too but isn't the Siri Eyes Free functionality. Hey Siri (if enabled) works on any version of MFT. One caveat, I believe sometimes the mic on the phone will take the Hey Siri request and not the mic in the car. Other than that, Hey Siri works well also -
I drove a rental Explorer XLT on vacation recently that had Sync3 with ApplePlay. That worked pretty well, made me kinda want it. I'll probably be upgrading at some point. I liked not having to do the 3 second press to get Siri rolling.

Car play is the shizzle. I had a rental impala while my front bumper was being fixed and loved the integration. Funny now techno demanding we are now that 3-5 seconds seems like an eternity.
